Shahi tukda is a rich, Mughlai dessert, Shahi Tukda or Double ka Meetha is a royal dessert straight from the culinary utopia of Hyderabad. Made by deep frying the bread, soaking it in sugar syrup, and then drizzling it with thick luscious rabdi, this Hyderabadi delight is one of the best yet easy to make Indian desserts.

Just trying to start the week with some tooth sweetening from the culinarypedia of the Mughals, this recipe is not for the health-conscious people but for sure you'll fall in love with the taste of it. Here we go just have a look at the final dish & give a review.

RECIPE

Serving : 4pax ; Time : 45–60 min ; cooking temperature : low

Ingredients for:

1. Rabdi:

Full cream milk — 300ml

Condensed milk -70gm

Sugar — 30gm

Saffron — few strands

Green cardamom powder — 2gm

Bread trimmings(edges)

2. Tukda(toast & sugar syrup):

Bread slices — trim the edges

Desi ghee- 50ml

Sugar — 150gm

Water — 80ml

Green Cardamon powder — pinch

Lemon wedge

3. Garnish:

Sultanas

Black raisins

Dried dates

Cashew

Saffron

Method:

STEPS:

1) Take out the slices of bread & trim the edges of it & cut them into triangle shapes- 1/2. Crum the trimming of the bread & keep ot aside.

2) Heat a saucepan & add the milk bring it to boil & add all the rabdi ingredients apart from condensed milk. Cook the mixture till it gets thicken up & then add condensed milk while cooling it down off the flames.

3) Heat a frying pan & saucepan together. Add only ghee to the frying pan & add sugar along with water in the saucepan. Add lemon & cardamom powder to the saucepan. Cook the sugar syrup till the single thread stage.

4) Shallow golden fry the bread cuts into ghee till it gets crispy, then simultaneously add it into the sugar syrup. Repeat the process with the rest of the pieces.

5) Assemble your dessert, made a layer of rabdi & tukda.

6) Garnish with the respective ingredients.

Serving tip:

Serve chill keep it refrigerated.

*fry the bread slice on the lowest flames to avoid burn marks & bitter flavor.
