MAWA BARFI :

Barfi or Indian fudge recipes are very common during the festival seasons. it is mainly prepared to be shared with family and friends as part of the festival celebrations. the most common dessert prepared during such festival is the milk-based dessert and mawa barfi or khoya barfi is one such popular choice across India.

It has the extra creaminess from the milk solids and when combined with the sugar, it makes it an ideal milk dessert. I make it quite often as it is quick and easy to make if you have access to khoya. also, it is easy to shape more importantly to share as a gift or confectionery.

Furthermore, some of the important tips, suggestions and variants for an ideal mawa barfi recipe or khoya barfi recipe. firstly, in this recipe, I have used a store-bought khoya which would hasten the cooking process. if you have access to homemade mawa or willing to make an instant khoya with the milk powder, you should be good using both options. secondly, I have added a minimal amount of sugar for a low to moderate sweetness with the barfi. having said that if you have sweet tooth, you can increase it as per your taste. lastly, because we have used khoya in this sweet, it may not last long at room temperature. hence you may have to store it in the refrigerator to preserve it for a week.

So today we are blogging about the very basic dessert, but the picture which I am sharing with the article is the derivatives of it which you can make very easily by adding the flavouring ingredients to this authentic base for barfi.

RECIPE

Serving: 16pieces; Time: 20–25 min; cooking temperature: low

Ingredients required:

Khoya / mawa — 400gm

Sugar — 200gm

Cardamom powder — 4gm

Pistachios (chopped) — 35gm (optional)

Method:

STEPS:

1. Grate the khoya/mawa mix it with sugar & then cook it in a nonstick pan on low flames & keep string it uniformly.

2. Mix it till the khoya & sugar starts to melt.

3. Keep on stirring the mixture uniformly until the mixture thickens up & started separating from the pan.

4. Add cardamom powder. After that bring the mixture to room temperature & shape it up to your preferences.

5. Garnish with pistachio or with any other dry fruits. Just give any kind of flavour according to your availability.

Serving tip:

Serve it cool with properly shaped or cut then into uniform shapes.
